HEAT LEVEL: MILD. The perfect starting point for heat and flavor. We use salt-fermented Cayenne Chili Peppers for a touch of heat. About as hot as Crystal or Louisiana and less hot than Tabasco.
ACIDITY: We use more peppers than vinegar in this sauce. This is a classic/Southern style Hot Sauce. It is vinegar forward...less vinegar forward than the other classic hot sauces (verified by pH testing). We use Fine French Champagne to balance the acidity and salt.
FLAVOR: Cayenne Pepper, Vinegar, Salt, and Champagne.
UMAMI: A hint of Umami from the fermentation of the peppers and the Champagne.
SALT LEVEL: Saltier than OPERA SAUCE but in line with a Classic/Southern Style Hot Sauce.
TEXTURE: More thin than OPERA SAUCE. The perfect consistency for drizzling or dipping.
FAT or CALORIES: ZERO.
